Well learnt something! Recipe was for 18cm tin and mine is 20cm, so I thought I should have increased the quantities a little, to 150g of butter/sugar/flour from 125g, but I tried that a few days later and didn't up the baking power, ooops, a dippy cake was the result! Still the first being more shallow is ok. I also made this one a tiny bit harder, was making it to take into work, and a few fussy people don't like walnuts, so half the cake doesn't have them in. Easy now the icing is done and I have, hopefully aligned the ones on the top with the ones in the cake, much harder before then!!!

Asian Aubergine and Pork Hotpot
A little adapted due to not being able to find any star anise, but thanks to some helpful advice I just put more cinnamon in, and I also forgot the fresh corriander, lol. Still very tasty and quite easy to do, just the right thing for a cold winter's evening. If you want the recipe visit BBC Good Food Guide
