Stay inside and cook (more) curry - something new

Continuing the theme of staying inside, and to be honest helped along nicely by the weather outside, it’s time to try something new.  Leaving the UK present, Rick Steins Far Eastern Odyssey, I haven’t cooked many from here, but Amanda fancies a biryani, and the book just popped open at this page.  Not with lamb, that’s not a favourite of Amanda’s in curry, childhood lamb stew has made stew, casserole or curry lamb low on the list of favourites...so I’ve swapped to chicken. Skipped the blade mace too, had to look that up I’d not heard of it.  Rather than grinder in the coffee grinder, I roasted the spices and then used my trustee hand spice grinder, therapeutic grinding...

Marinade, 2 hours, plenty of time to listen to the Stone Roses then...timer set for 1:30:so I can start the rice element, and get the fried shallots (aka red onion in this case) done.

Ok, so now the second part, and another example of read all the parts, serves 8 it says, 5-6 litre casserole it says. Those are quite large things.  Still it just about fits in the largest casserole we have. The magic of saffron and rose water sprinkled around, avoiding kitchen surfaces and clothes. The pop  in the oven for a little while...we’re getting a little peckish now.

Not long now!?!?

Time to eat...and put some of this in the freezer...

Stay inside and cook Curry; an old favourite

You’ve seen it all before, but why not see it again!  Madhur Jeffrey’s madras, followers will know the story of the book...borrowed and borrowed from library, paid fines, eventually said I’d lost it and paid a bigger “buy the book” fine... I do like the book though...and the curry. Music too...in the photos lol
