Nice bite on a Sunday Evening

No photo or video, as yet, for this one. But, a nice snack on a Sunday evening. Omelette with a bit of cheese and homemade oven chips. Couldn't be simpler. So, the chips first. I used a baking potato, nice size, and did slices, rather than chip shapes, but they work too. Dried the slices, sprinkled a bit of salt on each side, poured some olive oil in a roasting dish, and coated the slices in oil, then pop in the over for about 30 minutes on about 220C, that's a fan oven. Turn them about halfway through. With about ten minutes to go, beat four or five eggs and heat some oil in a frying pan. I put a small amount of cheese in with the egg and beat a little more, then cook the omelette, works ok for me. Alternatively, cook the omelette and then put the cheese on near the end.

A nice dollop of HP Sauce goes well with this :-)

So what is your favourite quick snack?

Raspberry Muffins

Not on video, but made raspberry muffins last week, very nice, very simple. I'd recommend them. I have a recipe for Prawn Laska, and address for a Chinese foodstore in Bristol, thanks Ben, so will be trying that, I might vary from prawn, very nice, but I'm always a little nervous over shellfish.
If anyone wants to suggest ideas, let me know :)

Cook-a-long with Richard - The Cake

Due to negative reaction when mentioning the 25th Dec in early October, the true title of this cake is left to the imagination...I'm sure you can work it out!
Anyway, it is a huge amount of fruit with some cake around it. Now that it's cooked I have to feed it roughly every week with a few spoons of brandy :-)

Cook-a-long with Richard Baking a Carrot Cake
